While restrictions are starting to lift in some areas, most of us will continue to stay close to home for the foreseeable future. As we continue to adjust our evolving restrictions, practicing mindfulness through baking is a great outlet to manage anxiety. Baking requires our full attention forcing us put our phone down, roll up our sleeves and to get our hands dirty. The act not only provides a gratifying sensory experience but fulﬁlls our need to create as well.

Butter or margarine – ½ cup
Granulated sugar – 1 cup
Eggs – 2
Mashed very ripe bananas (3 medium) – 1 cup
All-purpose ﬂour – 1 ¾ cups
Baking soda – 1 tsp
Baking powder – ½ tsp
Salt – ½ tsp
Carob chips – ¾ cup
Chocolate Flavored Zenbev – 1 Scoop
Cream butter and sugar together. Beat in eggs on at a time until smooth. Add mashed bananas and blend in.
In a second bowl, stir ﬂour with baking soda, baking powder and Zenbev. Add to banana mixture stirring only to moisten. Pour into greased 9 X 5 X 3 inch (23 X 12 X 7 cm) loaf pan. Bake in 350 degree oven for 1 hour until inserted toothpick comes out clean. Let stand for 10 minutes. Remove from pan and place on cake rack to cool.
